My First PIE: I made Preppy Kitchen’s Key Lime Pie 🥧

I’m going to start off by saying that whatever happened was my fault and nothing to do with the Recipe for Key Lime Pie from Preppy Kitchen that I used. I’ve never made a pie and this was my first attempt at making one so I thought ‘who else to turn to if not Preppy Kitchen’. I’ve made many of his other recipes and they were Fabulous.

But the problem is….things went slightly wrong and what I mean by that is that I read the recipe wrong. But everything still turned out great so that’s still something. Read on to see what happens!

1. I started off by following the recipe and used Biscoff biscuits with Butter to make the crust.

2. As the recipe suggested, I pressed the crust into the pan and baked it for 10 min. See below for the outcome after baking. It looks gorgeous.

3. As the crust was baking, I started on the filling and THAT’s where everything went wrong. I was supposed to mix the eggs with the zest of the lime. I accidently read it wrong and mixed the egg with all the key lime zest and the juice. That’s why it’s all frothy. I kept waiting for my mixture to look like the one in the video. Alas, it did not happen. 😦

4. I gave up on trying to get it to look like the video and proceeded to the next step. I added the condensed milk and the rest of the ingredients and completed the filling. At this point I realized what had happened and was pretty darn devastated by the result. IT WAS SUPPOSED TO BE PERFECT!! I wish I could say I had had a drink…I didn’t have any and was stone cold sober. See results below.

5. I transferred all the mixture into a slightly warm crust. Hoping for the best, I popped it into the over.

6. Look what I got as a result! It actually looked beautiful! I was proud of how it looked.

7. I left it to cool over night and the results were amazing. So I guess if you make a mistake on the filling, it’s pretty forgiving.

In conclusion, I definitely will make this pie again because it was delicious. I highly recommend following the recipe!! It could’ve only gotten better. Mine’s definitely not as pretty as Preppy Kitchen’s but I’m pretty proud of my first pie. I was not brave enough to make my own whipping cream so used store bought cream but it was still delicious. Would definitely make again. I would give it a 10/10.
